A Chitoi Pitha Cast Iron Pan (also called a Shaj Pan, Pitha Pan, Chitoi Pitha Korai, or chitoi pitha tava) is a specialized cast iron cooking pan designed for making chitoi pitha — a traditional Bengali rice cake popular in Bangladesh and parts of India

To make chitoi pitha:

1. Mix rice flour batter (often simple rice batter with salt/water).

2. Heat the cast-iron pan on the stove.

3. Pour a small amount of batter into each pit or on the flat surface.

4. Cook slowly so the pitha forms a soft interior and slightly crisp exterior.

5. Serve with chutney, molasses, coconut, curry, or other accompaniments typical in Bengali cuisine.
