A Chitoi Pitha Cast Iron Pan (also called a Shaj Pan, Pitha Pan, Chitoi Pitha Korai, or chitoi pitha tava) is a specialized cast iron cooking pan designed for making chitoi pitha — a traditional Bengali rice cake popular in Bangladesh and parts of India

To make chitoi pitha:

  1. Mix rice flour batter (often simple rice batter with salt/water).
