The Small Cube Rule: For authentic Tehari, cut your beef into very small cubes (about 1/2 inch). This allows the ACI Pure Tehari Masala to penetrate the meat quickly and ensures every bite of rice has meat in it.

Mustard Oil is Key: To unlock the full potential of this masala, you must cook the meat in high-quality Mustard Oil. Sauté your onions until translucent (not brown) before adding the meat and masala.

The One-Pot Method: Unlike Biryani, Tehari is not layered. Cook the meat until tender, then add the soaked Chinigura/Kalijira rice directly into the same pot. Sauté the rice with the meat for a few minutes before adding hot water.

The Green Chili Finish: Tehari gets its "zing" from whole green chilies. Drop 10–12 whole green chilies into the pot just before the water dries up to infuse the rice with a fresh, peppery aroma without adding extra heat.
