Malai Kulfi is a traditional Indian frozen dessert often described as "Indian ice cream." While it shares some aromatic profiles with Persian saffron ice cream—such as cardamom and pistachios—it is fundamentally different in how it is made and its final texture.

Key Differences from Regular Ice Cre
No Churning: Unlike Western ice cream, kulfi is never churned. This means no air is incorporated, resulting in a dense, solid, and fudgy consistency.
  • Melting Speed: Because it is so dense, kulfi melts much slower than regular ice cream.
  • Preparation: It is traditionally made by slow-cooking full-fat milk for hours until it reduces to a thick, caramelized consistency known as rabri.
  • Signature Ingredients & Serving
  • The Flavor: The "Malai" (cream) flavor comes from the caramelized milk solids. It is almost always flavored with green cardamom and garnished with pistachios or almonds.
  • The Form: It is typically frozen in metal conical molds and served on a stick (like a popsicle) or sliced into discs on a plate.
