Shidol, also known as Chepa Shutki, is arguably the most famous and beloved fermented fish product in Bangladesh, particularly in the Mymensingh, Sylhet, and Brahmanbaria regions. Unlike traditional sun-dried fish, Shidol undergoes a unique semi-fermentation process in airtight earthen pots (Motka).
