Hilsa (Ilish), or Tenualosa ilisha, is an anadromous fish—it spends much of its life in the sea but migrates into rivers to spawn. During this migration, its body undergoes significant physiological and biochemical changes.

Research comparing Padma and Hooghly hilsa found that Padma hilsa scored significantly higher for aroma, taste, and muscle texture in sensory testing. Researchers associated the difference partly with variations in amino acids and fatty acids, including higher levels of flavour-related compounds such as glutamic acid, alanine and aspartic acid, as well as differences in oleic and palmitoleic acids.

The Padma's freshwater environment, river conditions, food availability, and the fish's long upstream migration all contribute to the characteristics people associate with Padma hilsa. During migration, hilsa also draws on stored body energy, changing its lipid composition and muscle characteristics.

Why does Padma hilsa cost more?

The high price is not simply because it is “fatter” or more nutritious. It is a combination of:

• Exceptional taste and aroma: Padma hilsa has a strong reputation for a distinctive flavour and tender texture. Scientific sensory testing supports this reputation.
• Limited seasonal supply: Hilsa is a migratory fish with a specific life cycle, so supply varies with season and river conditions.

• Wild-caught fish: Genuine river hilsa is not a farmed product that can simply be produced in unlimited quantities.
• Provenance and reputation: “Padma hilsa” itself has become a premium identity in the marketplace.
• Size matters: Larger, mature fish generally command a higher price, adding another premium on top of river origin.
