Fresh: Because it is so delicate and watery, fresh Loitta often disintegrates during cooking. It is typically prepared as:
- Loitta Macher Jhuri: A spicy Bengali stir-fry where the fish is cooked until it crumbles into a dry, flavorful mish-mash, usually served with hot rice.
- Bombil Fry: A popular Maharashtrian snack where the fish is flattened to remove moisture, coated in semolina (rava), and shallow-fried until crispy on the outside while remaining melt-in-the-mouth tender inside.
Dried (Shutki): Sun-dried Loitta is a staple in Bangladeshi and coastal Indian cuisine. The drying process intensifies its flavor and creates a pungent aroma. It is often cooked into spicy chutneys or bhunas.
