The "Hyderabadi" Way to the Perfect Biryani:

  1. The Heavy Marination: Mix 2–3 tablespoons of Radhuni Hyderabadi Biryani Masala with thick yogurt, ginger-garlic paste, fried onions (Birista), and plenty of fresh mint and coriander. Marinate your meat for at least 4 hours (overnight is best).

  2. The "Kacchi" Style: For a true Hyderabadi experience, place the raw marinated meat at the bottom of a heavy-bottomed pot and layer parboiled rice on top.

  3. The "Dum" (Steam): Seal the edges of the pot with wheat dough to trap every bit of steam. Cook on a very low flame. This slow-cooking process allows the Radhuni Masala to release its oils and flavor the rice from the bottom up.

  4. The Finishing Squeeze: Hyderabadi Biryani loves acidity. Always add a generous squeeze of lemon and a spoonful of Ghee over the top layer before sealing the "Dum."
